Bánh xèo: listen for the sizzle

The pleasure of a crisp edge, fresh greens and a meal made for sharing.

Bánh xèo is a savoury pancake whose filling and size vary by region and kitchen. Rice-flour batter, turmeric, bean sprouts and combinations of shrimp and pork are familiar elements. The bright colour does not automatically mean egg is the main ingredient.

Keep the crispness in the conversation

Eat while the pancake is fresh and ask which greens or wrappers are served alongside. Break off a manageable piece and build your own balance of pancake, herbs and sauce. Ordering in stages can work well for a group when you want each pancake to arrive at its best.

From a food wish list to a real day out

Save this story before choosing where to eat. Open a linked place for practical details, then add the dish to a dated stop in your plan. Keep portion count, transport and drinks separate when they are charged separately. A relaxed meal deserves enough room in both your timetable and your budget.
